  • Salt to taste
  • Oil for shallow frying

For Toppings:

  • Sweet tamarind chutney
  • Green chutney
  • Finely chopped onions
  • Sev
  • Fresh coriander leaves
  • Lemon juice

👩‍🍳 How to Make Mumbai Street Style Ragda Patties

Step 1: Cook the Ragda

  1. Pressure cook soaked white peas with salt until soft (3–4 whistles).
  2. Heat oil in a pan, sauté onions until golden.
  3. Add ginger-garlic paste and tomatoes. Cook until soft.
  4. Add turmeric, chilli powder, garam masala, and salt.
  5. Add cooked peas and mash slightly for thick consistency.
  6. Simmer for 5–7 minutes.

  3. Shape into flat round tikkis.
  4. Shallow fry until golden and crispy on both sides.

  1. Place 2 patties on a plate.
  2. Pour hot ragda on top.
  3. Add green chutney & sweet chutney.
  4. Sprinkle onions, sev, coriander, and chaat masala.
  5. Squeeze lemon juice and serve immediately.
