Veg Kolhapuri is a famous Maharashtrian spicy curry made with mixed vegetables cooked in a rich, aromatic and fiery red Kolhapuri masala. Known for its bold flavors and vibrant color, this restaurant-style veg handi is perfect for special occasions, weekend lunches, and dinner parties.

🥥 Step 1: How to Make Kolhapuri Masala Base

Ingredients:

  • 2 tbsp oil
  • 1 inch cinnamon
  • 4–5 cloves
  • 4–5 peppercorns
  • 1 black cardamom
  • 2–3 green cardamom
  • 1 tsp cumin seeds
  • 1 tbsp coriander seeds
  • 3–4 spicy red chillies
  • 7–8 Kashmiri red chillies
  • 1 tsp poppy seeds
  • 3 tbsp fresh coconut
  • 50 ml water

Method:

Heat oil on low flame. Add all whole spices and roast gently until aromatic.
Add fresh coconut and roast until light golden brown.

Cool completely and grind with water into a smooth paste.

Blend:

  • 7–8 medium tomatoes
  • 9–10 boiled cashews

You will need:

  • Cauliflower
  • Carrots
  • Green peas
  • French beans
  • Onion petals
  • Capsicum

Heat oil and stir-fry vegetables on high flame for 1–2 minutes each.
Do not overcook — they should remain slightly crunchy.


🍲 Step 4: Make Restaurant Style Gravy

Heat oil in a wok. Add:

  • Jeera
  • Bay leaves
  • Dry red chillies

Add chopped onions and cook until golden brown.
Add ginger-garlic paste and green chillies.

Lower flame. Add turmeric and Kashmiri red chilli powder.

Add prepared Kolhapuri masala paste with some water. Cook until oil separates.

Add tomato-cashew puree and cook until thick.

Add Kashmiri red chilli paste for vibrant red color.

Mix in stir-fried vegetables and adjust consistency with hot water.

Finish with:

  • Paneer (optional)
  • Garam masala
  • Kasuri methi
  • Fresh coriander
  • Lemon juice

Simmer for 1–2 minutes.
