Ingredients for Veg Samosa

For Outer Cover (Samosa Dough)

  • Maida (All-purpose flour) – 2 cups
  • Ajwain (Carom seeds) – 1 tsp
  • Salt – to taste
  • Oil – 4 tbsp
  • Water – as needed

For Samosa Filling

  • Boiled potatoes – 4 (mashed)
  • Green peas – ½ cup
  • Green chilies – 2 (finely chopped)
  • Ginger – 1 tbsp (grated)
  • Cumin seeds – 1 tsp
  • Coriander powder – 1 tsp
  • Garam masala – ½ tsp
  • Red chili powder – ½ tsp
  • Amchur (dry mango powder) – 1 tsp
  • Salt – to taste
  • Oil – 2 tbsp
  • Fresh coriander leaves – chopped

👩‍🍳 How to Make Samosa – Step-by-Step

Step 1: Prepare the Dough

  1. In a bowl, add maida, salt, ajwain, and oil.
  2. Rub oil into flour until crumbly.
  3. Add water little by little and knead into a tight dough.
  4. Cover and rest for 30 minutes.

Step 2: Make Samosa Filling

  1. Heat oil in a pan, add cumin seeds.
  2. Add ginger and green chilies, sauté lightly.
  3. Add peas and mashed potatoes.
  4. Add all spice powders and salt.
  5. Mix well and cook for 2–3 minutes.
  6. Add coriander leaves and cool completely.

Step 3: Shape the Samosa

  1. Divide dough into balls.
  2. Roll each into an oval shape.
  3. Cut in half and form a cone.
  4. Fill with potato masala.
  5. Seal edges using water.

Step 4: Fry the Samosa

  1. Heat oil on low flame.
  2. Add samosas and fry slowly until golden.
  3. Increase flame at the end for extra crispiness.

🔥 Tips for Perfect Crispy Samosa

  • Dough must be tight, not soft
  • Fry on low heat only
  • Oil should not be too hot initially
  • Resting dough is mandatory
